Just Thursday



Outside my window.. perfect...mid 80's and I am enjoying it!
The time is.. 2:16 pm
Today I feel.. frustrated, worried and a little scared

I am thinking.. I'm ready for the situation to be over.
At the moment, I am thankful.. that I have a wonderful husband.

I am going.. to rest tomorrow night.

I am wearing.. khaki pants, ivory cami and a purple shirt with brown shoes.
I wish.. I could go home, take a nap and just forget.
I am reading.. school books.
I am working on.. finishing a Rt 44 Sonic sweet tea

I am hoping.. to get over this blahness and worried feeling

I am hearing.. the air blowing.

Outside my window.. mid 80's right now and rising... Boo :(
The time is.. 9:03 am
Today I feel.. excited. I placed at the fair with my pickles and most everything else I took.
I am thinking.. I am just tired...
At the moment, I am thankful.. that I have the "want-to" to learn how to can. It seems to be a dying art.
I am going.. to start start my actual classes on Saturday! One more year!!
I am wearing.. Khaki's, white cami and a black, white and lavender striped top.
I wish.. I was more rested today. I slept last night but I dreamed and it was dreams that made me restless while sleeping
I am reading.. Jam and Preserves and Life of Pi
I am working on.. school stuff.
I am hoping.. that I can still get the cute 4 oz jars I am wanting.
I am hearing.. radio
I bet you didn't know.. I put 4 pickle recipes in the fair and all four placed! One of the four got top pickle as well!!!!
One of my favorite.. things I can right now is jellies and jams. Christmas gifts!!!
My weekend plans include.. [thursday] getting school stuff ready and making pickles [friday] maybe eating dinner with friends[saturday] school[sunday] pick up my fair stuff, relax and maybe do a little homework.

Certo and Grape Jelly

One of the pops that I love to hear right now is the popping of a can that is sealing. I have been trying to set food back and also find easier ways to have things that we like to eat that will be ready when we want it. One of the things is chili. I finished 40 pints so far today. Plus 9 pints of dill relish and 4 1/2 pints of grape jelly. I can't wait to try the grape jelly but it is super easy so I am going to share the recipe with you today. It is an old recipe, it called for 1/2 a bottle Certo. They don't even make it in bottles anymore. Just an FYI for you, if you find one that calls for 1/2 bottle of Certo use 1 package of the Certo that is made today, they are equal.

6 cups of sugar
3 cups water
2 pkgs. of Certo liquid pectin
1 can frozen grape juice (keep it frozen and make sure it is 100%juice!!!)

combine the sugar and water in a pan. Bring to a boil and remove from heat. Stir in Certo and frozen grape juice. Mix well and then skim off the foam or bubbly top. Ladle into jars and process in water bath for 10 minutes.

I hope that you enjoy it! It is simple way to make jelly and would make a great Christmas gift. In 8 ounce jelly jars it looks so pretty!

Outside my window.. sunny and hot. It is 92* with a heat index of 99*
The time is.. 10:23 am
Today I feel.. tired, irritated and hot

I am thinking.. that I am tired of worrying. I am also glad that my intersession class is over.
At the moment, I am thankful.. for a wonderful husband who will let me vent and doesn't say too much. We had such a good date night last night!

I am going.. try and figure out my phone.

I am wearing.. dark khakis and a blue, green, pink & white striped polo.

I wish.. that it wasn't so hot here.

I am reading.. Still "Life of Pi" and all the stuff for my homework for my class.

I am working on.. a review and learning this darn phone!
I am hoping.. that it will all be okay.
I am hearing.. the radio.
Around the house.. jars, jars and more jars

I bet you didn't know.. that a friend of mine dropped of jars for me to can with. So I have almost 300 jars in various states of being cleaned.

One of my favorite.. games on my phone is solitaire and words with friends

My weekend plans include.. start chili cooking tonight/tomorrow and then start canning it. We will love it this winter!

To be put in time out

I chose to write about having a time out!



Time out. It has such a negative connotation, but to me it might just be a good thing! I would want my hubby to be put in time out also. It would be in a nice cabin with a creek nearby and good hunting ground. We could go and hunt and fish all day and come back and relax. We would love to have satellite and a hot tub. Cell phone service wouldn't be a biggie but Internet would be a have to! We could relax and just enjoy ourselves. I would read all the books that I hadn't gotten to read lately and spend some time with the husband and just have some us time. The dogs would have to come as well and we would have a good time with all of us. This would be like a second (or third in our case!) honeymoon or a perfect relaxing week. I keep thinking that this will actually happen soon!

Outside my window.. RAIN!!!!! Thank goodness. I have been getting tired of temps over 100* and the heat index 15* higher.

At the moment, I am thankful.. that Roxy didn't actually find the skunk. I also bought my ONE book for class this semester last night.
I am going.. so make some more pickles tonight since it is cooler

I wish.. that Mister and I could have had the day off together today. Paid. So that we could do nothing.
I am reading.. Canning books and Life of Pi. It seems like everyone keeps pulling me away from it!!!
I am working on.. getting my contacts copied from my blackberry to my SIM card so I can get my new phone this weekend!
I am hoping.. to start running when I get my phone.
I am hearing.. thunder and I am loving it.

I got an.... AWARD!!!


I have been lagging behind and need to do this!!! Stef over at O0ps...There Goes My Mind was so gracious to give me this award so go check her out!
Now onto the seven random things about me.
1. I have been married twice to the same man.
2. I got to school full-time, work full-time and a part-time job also.
3. I have now been in school for three-quarters of my life. This includes college, high school and elementary school!
4. I have a garden that I was lazy and didn't weed like I should have. I am getting tons of cucumbers from it still though.
5. I love love love Sonic's cherry limeades.
6. I shot my first deer this last fall and hope to shoot my first with my bow this fall.
7. I am the girl who you either love or can't stand. I am not the normal girly-girl.
